protein + -ase で覚えると定着しやすいです。生物で -ase が付けばまず「酵素」だと思うクセをつけると、amylase, lipase, lactase などにも横展開できます。つまり proteinase は「protein に作用する酵素」。しかも作るのでなく、酵素は基質を分解・変換することが多いので、「タンパク質を切る側」と押さえるのがコツです。protease とほぼ同系統の語として見て、消化や細胞内分解の場面と結びつけると忘れにくくなります。

proteinase は protein + -ase から成る語で、『タンパク質に作用する酵素』という作りです。protein はフランス語 protéine を経てギリシャ語 prōtos「第一の」にさかのぼり、prototype と同根。生命の『主要物質』を分解する酵素だと見えてきます。
