offingは英語off「離れて」+名詞化語尾-ingから成る海語で、offは古英語ofにさかのぼります。岸から離れた遠い海面という発想がそのまま「沖」になり、offshoreやoffsetにも同じ「離す」感覚が残ります。
Offing was formed in English from off with the noun ending -ing. Off goes back to Old English and carries the idea of being away from something. In sea language, it came to mean the water lying away from the shore, and from there the open sea in the distance.
