cucumber は古フランス語 cocombre を経て、ラテン語 cucumis「キュウリ」にさかのぼる語です。はっきりした接辞分解は薄いですが、植物名そのものが英語化した形で、学名 Cucumis に同根なので「そのままキュウリの名が入った語」と考えると納得しやすいです。
