gelling は gel + -ing で、gel はフランス語経由でラテン語 gelu「凍る寒さ・氷」にさかのぼります。gelatin や gelid も同じ語根を持ち、『液体が冷えてゆるく固まる』感覚をつかむと、ゲル化する意味がすっと入ります。
