samphireは中英語sampiereを経て、古フランス語herbe de Saint Pierre「聖ペテロの草」が縮まってできた語です。海辺の植物なので漁師の守護聖人Peterと結びつき、名の由来を知ると「海辺の草」らしさが見えてきます。関連形はsampire。
Samphire came into English through Middle English sampiere, from Old French herbe de Saint Pierre, meaning "Saint Peter's herb."
