Substituting is the -ing form of substitute. The final silent e of substitute is dropped before -ing, producing substituting. Picture removing one item from a position and putting another there: substituting honey for sugar means using honey where sugar would normally be used. In the pattern substitute B for A, B is the new replacement and A is the original item. This order is worth memorizing because substitute can also appear in patterns whose wording varies between dialects and contexts.
