graver は古英語 græfere にさかのぼり、grafan「掘る・刻む」からできた grave に -er「する人」が付いた語です。engrave や engraving と同根で、表面に浅く触れるのでなく、深く刻んで印を残す人だと考えると「刻字職人」の意味が腑に落ちます。
Graver goes back to Old English `græfere`, from the verb `grafan`, meaning "to dig" or "to carve." It is built from the same root as `grave` in the sense of carving, plus the agent ending `-er`.
