lox はイディッシュ語 laks「サケ」から英語に入った語で、さらに中高ドイツ語 lahs、古英語 leax にさかのぼります。もとは魚名そのものなので、「サケ料理」から燻製・塩漬けサーモンを指すようになったと分かります。関連形はドイツ語 Lachs、古英語 leax。

It entered English from Yiddish laks, meaning “salmon.” The source traces that word further to Middle High German lahs.
