senegalese は、ポルトガル語経由で広まった地名 Senegal に、イタリア語・フランス語経由の接尾辞 -ese を付けた語です。-ese は Chinese や Japanese と同類で「〜に属する人」。つまり「セネガルに属する人」がそのままセネガル人の意味になります。
