sorted は sort + -ed。sort は古フランス語 sorte、さらにラテン語 sors「くじ・割り当て・種類」にさかのぼり、元は“くじで区分される”感覚です。そこから「種類ごとに分けて整える」となり、assort や assortment にも同系の発想が見えます。
