Cartographer is built from carto-, meaning "map," and -grapher, meaning "writer" or "drawer." The first part came through French carte and ultimately from Greek khartes, "sheet of paper," while the second comes from Greek graphein, "to write." So the word originally meant, very directly, a person who draws maps; chart and graphic are related words.
