cassis はフランス語 cassis「黒スグリ」にそのまま由来する借用語で、語の分解は特にありません。crème de cassis や cassis liqueur でも同じ語が使われ、果実名がそのまま飲み物名になっています。土地の名ではなく実の名だと分かると、語の見え方が変わります。
Cassis is a direct borrowing from French cassis, the name of the blackcurrant. It was taken into English without much change in form. Because the fruit name was already familiar in French, it also passed into names of drinks made from it, such as creme de cassis.
