Copying is formed from copy plus the participial and gerund ending -ing. Copy entered English through Old French copie from Latin copia, which meant “abundance” or “supply.” In medieval usage, the word developed the sense of a reproduction or transcript, something available as another instance of an original. The verb copy then came to mean making such a duplicate or transcription.
