酪農は牛などの家畜から牛乳を生産する農業活動です。生産した牛乳はそのまま販売されたり、チーズやバターなどの乳製品に加工されたりします。

dairying は dairy「乳製品の仕事」+ -ing で、dairy は中英語を経て古英語 dæge「乳しぼりやこね仕事をする女性」にさかのぼります。dairymaid や dairyman と同根で、「乳の世話をする仕事」から酪農全体を指すようになったと分かります。
