excerptはラテン語excerptumに由来し、ex-「外へ」＋carpere「摘み取る」に分けられます。もとは本文から必要な箇所を「つまみ出す」ことなので、抜粋が切り取りではなく選び抜きだとわかります。excerptedやexcerptionも同根です。
