eying は古英語 eage 由来の eye に進行の -ing が付いた、きわめて素直な形です。eyeball や eyewitness と同じ eye の語族で、単に見るより「目を据えて狙う・値踏みする」感じが出るのは、語そのものが“目を向け続ける”形だからです。
