interesting に -ly が付いた形なので、まず「興味深い」→「興味深く言えば」→「興味深いことに」とたどると覚えやすいです。ポイントは、物そのものの面白さを述べるというより、話し手が「ここは注目に値する」と文全体にラベルを貼る感覚。Interestingly, ... のように文頭で使われやすく、surprisingly（意外にも）や frankly（率直に言えば）と同じく、内容へのコメントを添える副詞です。なお interestedly は「興味を持って」で別語なので混同しないようにすると定着します。
This is just `interesting` + `-ly`, but it usually comments on the whole sentence, not one action. It often comes first: `Interestingly, ...` to signal "this point is worth noticing." Do not mix it up with `interestedly`, which means doing something with interest.
