interfacial は inter-「間に」＋ face「面」＋ -ial「…に関する」から成る語です。face はラテン語 facies「姿・表面」にさかのぼり、二つの面の“あいだにあるもの”という発想から「界面に関する」という意味が腑に落ちます。関連語は interface, superficial。
