bulimia はギリシャ語 bous「牛」+ limos「飢え」から成り、文字通りは「牛一頭でも食べられそうな飢え」です。bulimic や bovine が近い根を持ち、単なる大食いでなく制御不能な飢餓感を表す語だと腑に落ちます。
