civet はフランス語 civette から入り、その奥はアラビア語 zabad「ジャコウ」にさかのぼる語です。もとは香料の名が先で、その香りを出す動物名になったため、『においが先に名を与えた』語だと分かります。zibet や civetone が近縁です。
Civet came into English from French civette, ultimately from Arabic zabad, referring to musk or a perfume substance. The name was first used for the strong-smelling substance itself.
