couscous は、北アフリカなどでよく食べられる小さな粒状の小麦製品、またはそれを使った料理を指します。日本語の「クスクス」とほぼ同じ意味ですが、英語では食材名としても料理名としても使われます。
A food made from tiny granules of moistened semolina wheat, traditionally steamed and widely eaten in North Africa. The word can also refer to a prepared dish in which these granules are served with vegetables, meat, broth, herbs, or other ingredients.

couscous はフランス語 couscous から英語に入り、その前はアラビア語 kuskus、さらにベルベル語系に由来する。kus-kus という反復形は粒を砕く・細かくする感じを帯び、あの細かな粒状食品の姿にぴったり重なる。関連語に cuscuz、couscoussier。
English borrowed couscous from French, which received the word from North African Arabic forms such as kuskus. Those forms are generally traced further to Berber languages of North Africa, where both the food and its preparation have deep roots. Precise claims about the original internal formation are uncertain, so the safest historical picture is a path from Berber through regional Arabic and French into English. The spelling couscous reflects its French transmission.
