craving は古英語系の crave に接尾辞 -ing が付いた形で、もとは「強く求める・懇願する」というゲルマン系の感覚です。crave や craver と同根で、ただ欲しいのでなく、心が何かを要求し続ける感じが「渇望」になりました。
