解説 Definition
override は、上位の権限や特別な判断によって、すでにある決定・設定・命令より自分の判断を優先し、それを変更したり無効にしたりすることを表します。単に取り消すだけでなく、より強い判断で置き換える感覚があります。

overrideはover-「上から」とride「乗る・踏み越える」の結合で、古英語oferridanにさかのぼります。もとは文字どおり馬で乗り越えることで、そこから相手を踏みつぶすように「覆す・無効にする」へ発展しました。overrunやrideも近い仲間で、上から越える力関係が意味に残ります。
Override combines over- and ride, and it goes back to Old English oferridan. It first meant literally riding over or across something, often with the sense of trampling.
