plumbing は plumber に -ing が付いた語で、plumber は古フランス語経由でラテン語 plumbum「鉛」にさかのぼります。昔は水道管に鉛が多く使われたため、「鉛を扱う仕事」がそのまま配管を指すようになりました。plumb や plumber も同じ語根です。
