legal が見えれば「法律に関するもの」までは取れます。決め手は語尾 -ese。Chinese や Japanese のような「〜語」だけでなく、journalese / officialese のように「その世界の人だけが使う、堅苦しく回りくどい言い回し」を表すことがあります。だから legalese は単なる law や legal terms ではなく、契約書や規約に出る、一般人には読みにくい“法律家っぽい文体”全体を指す語。be written in legalese の形でも見ておくと定着しやすいです。

legalese は legal「法律の」+ -ese「〜語・〜風の言い回し」から成る語です。legal はラテン語 lex/legis「法」にさかのぼり、journalese や officialese も同型なので、「法律そのもの」より「法律っぽい回りくどい文体」を指す理由が見えてきます。
