marsala はシチリアの都市名 Marsala から来た語で、地名はアラビア語 marsa Allah「神の港」に由来するとされます。Marsala wine や chicken marsala も同じ名を受け継ぎ、もとは「その港町のもの」という印でした。地名が味の名になった語です。
