picketing は picket（ピケ隊・杭）+ -ing で、picket はフランス語 piquet「尖った杭」に由来します。もとは杭や見張り線を指し、そこから人が列を作って出入口を囲む労働運動の意味へ広がったので、「線を張る」感じがそのまま残っています。関連語に pique、piquant があります。
Picket came into English through French piquet, referring to a pointed stake. Its meanings expanded from a stake to a posted guard or an outlying line of soldiers. By the nineteenth century, picket could also denote people stationed outside a workplace during a labor dispute. Picketing is formed by replacing the final silent e of picket with -ing and names either the action in progress or the activity generally.
