sodding は sod「草皮」+ -ing。sod は中英語を経て中低地ドイツ語・中オランダ語系の「芝のついた土の塊」に由来し、soddy や sod house も同根です。土ごと切り出した芝を敷く作業像が、そのまま草皮を張る意味になっています。
