Unsophisticated is built from un- and sophisticated. Sophisticated goes back to Greek sophistes, meaning a wise or clever person, which is also the source of sophist and philosophy. In English, sophisticated first had the idea of being altered in an artificial way, and later came to mean refined or worldly. So unsophisticated developed the sense of being plain, natural, or not polished.
