surgery は古フランス語 surgerie を経て、さらにラテン語 chirurgia、ギリシャ語 kheirourgia にさかのぼります。kheir「手」+ ergon「仕事」の組み合わせで、surgeon や chiropractic と同根と考えると、「手で行う治療」から「手術」になったと分かります。
From Old French surgerie, from Latin chirurgia, and earlier Greek kheirourgia. It is made from kheir meaning "hand" and ergon meaning "work," so the original idea was work done by hand. That sense developed into medical treatment performed by the hands, and related words include surgeon and chiropractic.
