bitterness は bitter + 接尾辞 -ness でできた語で、古英語 biter・bitan、さらにゲルマン祖語 *bitras- にさかのぼります。語根は「かむ・食い込む」感覚なので、bite や bitter が同根で、「舌を刺す味」から「つらさ・わだかまり」へ広がったと分かります。
