食道は、口から胃へと食べ物を運ぶための管状の器官です。食べ物を飲み込んだときに、その通路として機能しています。

Esophagus comes from Greek oisophagos. It is usually explained as built from parts meaning "to carry" and "to eat," so the original image is of something that carries food onward.
