linearityはlinear+ -ityで、linearはフランス語経由のラテン語linearis、さらにlinea「糸・線」に由来します。lineやdelineateも同根で、直線性が「糸をぴんと張ったようにぶれない性質」だと思うと意味がつかみやすくなります。
Linearity comes from linear plus the noun suffix -ity. Linear goes back through French to Latin linearis, from linea, meaning "line" or originally "thread."
