uncouth は un-「否定」+ couth で、couth は古英語 cuth「知られた・なじみのある」、さらに cunnan「知る」に由来します。もとは「見知らぬ」が核で、そこから「野暮ったい」へずれたので、can や cunning と同根と知ると意味変化が見えます。
