gouge は古フランス語 gouge「丸のみ」、さらに後期ラテン語 gubia「のみ」に由来します。もとは木をえぐる湾曲した刃物の名で、gouger や gouging も同根と見ると、語が道具名から「えぐる」という動作へ広がった流れがよく見えます。
